Cajun Hasselback Chicken
Ingredients
- 2 boneless, skinless chicken breasts
- 4 oz cheddar or pepper jack cheese, sliced into thin 1/4 inch slices
- 4-6 oz deli-sliced ham, cut into strips about 1″ by 2″
- 1/2 - 1 tbsp Cajun seasoning (just depends on how much you like)
- Preheat the oven to 350 degrees
- Using a sharp knife, make slits in the chicken breasts that are about 3/4 inches wide, making sure not to cut all the way down through the bottom of the chicken breast. Sprinkle the tops with the Cajun seasoning
- Place the cheese slices and ham in the slits of the chicken.
- Place in a slightly greased baking dish and bake 30 minutes, or until the chicken is cooked through.
